Herb & Spice Burger with Dried Cherries

Grilling meat makes chemicals that cause cancer.  High heat applied to animal protein makes carcinogens called malondialdehyde. 

Researchers at UCLA found that heavily spiced burgers reduced the concentration of the disease-causing compound by 71%.  Add some dried cherries, which are antioxidants, and you have a tasty, powerful burger!

Serves: 4

Ingredients:
  • 1 pound ground beef, turkey or lamb
  • 3/4 tsp. kosher salt
  • 2 1/2 to 3 T. of an herb and spice blend that includes ground cloves, cinnamon, oregano, rosemary, ginger, black pepper and paprika. (your favorites)
  • 1/4 cup dried tart cherries, finely chopped
  • 1 T olive oil for brushing

Place all of the ingredients except the oil in a medium bowl and mix until well combined. Measure in 1/4 pound portions.

Transfer patties to platter and brush with oil on both sides. Cook on a hot grill, turning once only, until desired doneness. (Medium is about -- 135 degrees; well done is 160.)

Serve with your favorite condiments and fixings, but not many are necessary due to the herbs, spices and cherries.  It is very good with Tzatziki sauce (Greek cucumber/yogurt suace).
